2 Carrots, sliced
1 Onion, chopped
1 Green Capsicum, seeded and sliced
2 Tomatoes, chopped
1 Cooking Apple, peeled, cored and chopped
1 Garlic Clove, crushed
1 tbsp Fresh Sage, chopped
100g/4oz cooked Lentils
1 tbsp Raisins
2 tbsp Unsalted Peanuts
Salt and Pepper
275g/10 oz Natural Yoghurt
25g/1oz Cream Cheese
1. Melt the butter in a pan, add the onion, carrots, pepper, tomatoes, apple, garlic and sage and fry gently for 15 minutes.
2. Add the lentils, raisins, peanuts, salt and pepper and continue to cook for 3 minutes.
3. Meanwhile, in a bowl, mix together the yogurt and cream cheese, blending well. Stir into the vegetable mixture and heat gently for 5 minutes. Serve immediately.
