The Organic Chef produces a wide variety of very high quality charcuterie products, ranging from Pateto Sausages to Salami. The products are produced under Danish government control from pure organic raw materials and strictly without the use of Nitrite, artificial colours, Phosphates and artificial flavouring. The success of the products has come from innovation and creativity bringing the organic products into the modern world, where food awareness is gaining a stronghold. The taste experience is one of the Fair Food products unique qualities. We never compromise âespecially not with our aesthetic responsibility. We reach far to find the best taste experiences. For example we have gone as far as Cambodia, to find the best tasting spices and we give the local hard working people a fair deal in return for their good products. We constantly work towards making our entire production process as CO2 neutral as possible. This task is high on our list of priorities. For example, at the moment we are working on switching the majority of our total electricity usage over to "Wind Power".
We are Denmark's largest producer of organic charcuterie, such as organic sausages. No to nitrite in organic food products.
A new European directive means that it is now legal to use both nitrite
and nitrate as preservatives in organic food. Aalbaek Specialities are
of the opinion that this goes against the very ethical thought of organic
foods being pure and honest.
We only use fresh first class organic raw materials and we are careful with the food in our factory, therefore we do not need Nitrite in our products to achieve food cosmetics effects or an artificially prolonged shelf life. We encourage the consumers to keep an eye out for the organic food ingredient list, so they can continue to buy clean organic products, without the unnecessary additives. (Nitrite is the preservative E250)
Food AwardsThrough the years Aalbaek Specialities have received a great number of awards and recognition from both Denmark and abroad for our conventional and organic products. The Gastronomic Academy of Denmark every year present honorary awards to individuals who have made an extraordinary contribution to promote Danish Gastronomy through cookery skills and production of quality food products. In 2006, Peter Aalbaek received an honorary diplomacy for his dedicated work in developing outstanding and tasty organic quality food for the Danish consumers.
