Beef with black bean & garlic: 450g (1lb) rump steak (thinly sliced) 1 medium onion, coarsely chopped 1 small green pepper, diced 150ml (¼ pint) black bean sauce 2 tsp minced garlic 3 tbsp vegetable oil 1 tbsp cornflour 1 tbsp soya sauce 100ml water Heat the oil in a wok or large frying pan and brown the steak at a high heat. Now add the onions and green pepper and continue to stir-fry for 2 minutes, add the garlic, lower the heat and fry for a further minute. Lastly add the soya sauce and black bean sauce and the cornflour mixed with the water. Stir until it thickens to a glaze.
